While I made this recipe with fresh pomegranate juice, (our pomegranate tree produced soooo much fruit this year!), you can also buy your juice from the store and enjoy the same delicious taste.

In a nutshell, they’re easy to make and require only TWO ingredients. No shaking, no stirring, no hard to find ingredients or expensive liquors. You can buy a $10 bottle of bubbly from your neighborhood grocery store, pour it between your glasses, top with pomegranate juice and serve!

Pomegranate Mimosa Recipe (AKA the BEST Christmas Mimosa Recipe)
Ingredients:
- 1 bottle (750ml) of chilled Sparkling Wine, Prosecco, or Cava
- 1 to 2 cups of pomegranate juice, chilled (fresh or store-bought)
- Pomegranate seeds (optional, for garnish)
- Fresh rosemary or mint sprigs (optional, for garnish)

How to Make a Pomegranate Mimosa
1. Prep the Glasses: For extra festive mimosas, rub a citrus wedge (oranges work great) along the rims of your champagne flutes and dip them in granulated sugar. This adds a little sweetness and makes the glasses look extra special for your Christmas mimosa. (I skipped this step because I love the tartness of pomegranate juice).
2. Pour the Bubbly: Fill each champagne flute about two-thirds of the way with chilled sparkling wine.
3. Add the Pomegranate Juice: Top off each glass with pomegranate juice, filling the remaining one-third. No need to stir—the juice will mix just right on its own.
4. Garnish: Drop in a few pomegranate seeds for a pop of color, and add a sprig of fresh rosemary or mint for that aromatic touch.

- Herbal Kick: Try adding a splash of rosemary syrup for a hint of herbal goodness.
- Non-Alcoholic Option: Swap out the sparkling wine for sparkling white grape juice or sparkling water for pomegranate mimosas that are family-friendly.
Tips for the Perfect Christmas Mimosa
- Chill Everything: Make sure both the sparkling wine and pomegranate juice are well-chilled. I like to put my champagne in the freezer for about 20 minutes before popping it open – just don’t forget it in there!
- Skip the Stirring: The sparkling wine and pomegranate juice will combine on its own when the juice is poured on top.
- Choose the Right Glass: Champagne flutes work best, but you can also use coupe glasses, which add a vintage touch – or all purpose wine glasses.
- Use Can Freeze Pomegranate Seeds!: If you buy fresh pomegranates at your local farmers market, or your tree had a really productive year, freeze those seeds and use them later! They’ll keep for up to a year and you can enjoy pomegranate mimosas any time of year.

- If you make fresh pomegranate juice for the mimosas, 1 large pomegranate will give you about a cup of seeds for just over ½ cup of juice.
- There is no perfect ratio for mimosas, but a good rule of thumb is ⅔ sparkling wine and ⅓ juice. If you want your pomegranate mimosa a little stronger, add more sparkling wine. If you like them more tart, add more juice.

What champagne do you use for a mimosa?
For mimosas, it’s best to use a Brut Champagne (or sparkling wine from California) or a Spanish Cava, both of which are dry and not too sweet. You can also use Prosecco, but these can be on the sweeter side.
Can you make a mimosa with Prosecco?
Yes, you can! Just keep in mind that Prosecco is fruitier than sparkling wine. Some people really like a sweeter mimosa, so if you fall into that camp, go ahead and make your pomegranate mimosa with Prosecco!
