Ingredients

  • Strawberry juice (buy strawberry juice or juice your own strawberries)
  • Sparkling wine (cava or prosecco)
  • Whole strawberries (for garnish)

How to Make It

Making strawberry mimosas is as simple as it gets, but that’s the beauty of them—effortless elegance.

  1. Chill Your Ingredients: Ensure your sparkling wine and strawberry juice are both ice-cold for the most refreshing results.
  2. Pour the Juice: In a champagne flute, pour about 1/3 glass of strawberry juice. If you like a bolder pink color or sweeter flavor, you can adjust to taste.
  3. Add the Bubbles: Slowly top off the flute with your sparkling wine. Pour gently to prevent overflow.
  4. Garnish: Take a whole strawberry, cut a small slit at its base, and perch it on the rim of the glass. For extra flair, you can add a sprig of mint or even a sugar rim.
  5. Serve and Sip: Enjoy immediately while it’s bubbly and beautiful.

The Best Sparkling Wine for Mimosas

The best sparkling wine for mimosas is affordable, dry, and bright—bringing the bubbles without overpowering the juice. Here are some great options:

  • Cava: Crisp, citrusy, and budget-friendly. A classic mimosa choice.
  • Prosecco: Fruity and light with peachy notes for a sweeter touch.
  • Sparkling Wine: California has very affordable options.
  • Brut Champagne: Splurge-worthy and elegant with balanced acidity.
  • Crémant: Champagne’s cool cousin—refined and wallet-friendly.

Stick to Brut or Extra Brut to avoid overly sweet results, and serve it ice-cold.

FAQ

How many mimosas per bottle of champagne?

A standard 750ml bottle of Champagne or sparkling wine pours about 6 glasses. For mimosas, you can stretch a single bottle to make 6-8 mimosas, depending on your pour size.

Some mimosa recipes call for a 1:1 pour ratio. That’s too much juice for me, but if you like sweeter champagne cocktails, you’ll love a 50/50 champagne-juice ratio.

I usually do a 2:1 mimosa pour, where you fill the champagne flute 2/3 of the way and top it off with 1/3 strawberry juice.

If you’re hosting brunch, plan for 1 bottle per 4-5 guests, assuming they’ll each enjoy 2-3 mimosas. Of course, if your crew loves bubbles as much as I do, keep an extra bottle (or two) chilled—better safe than sorry!

How do you cut strawberries for mimosas?

Before you do anything with the strawberries, remove the green tops.

Here’s what to do next:

  • For Garnish: Cut a small slit at the base of a whole strawberry and perch it on the rim of the glass for a pop of color.
  • For Mixing: Slice the strawberries lengthwise so the silhouette of the fruit will float on top of the drink. Dice the strawberries into small chunks if you want them to float throughout the drink.

Pro tip: Chill your strawberries before cutting to keep them fresh and firm.
